I know it has been forever since I posted one of these, I have been crazy busy and I am so sorry! But, I am going to get back into the rhythm now. So just in time for winter and the cold let's do gravy huh? A great topping for so many things and of course it is vegan! So where could you go wrong. Enjoy.

-1/4 c Vegetable Oil
-1/3 c Chopped Onion
-3 cloves garlic, minced
-1/4 c Spelt Flour (or All-Purpose Flour)
-2 tsp Nutritional Yeast
-2 tbsp Light Soy Sauce
-1 c Vegetable Broth
-1/4 tsp Dried Sage
-1/4 tsp Salt
-1/4 tsp Ground Black Pepper

1.) Heat oil until bubbling.
2.) Brown Onion and Garlic.
3.) Stir in Flour, Nutritional Yeast, and Soy Sauce.
4.) Season with Sage, Salt, and Black Pepper.
5.) Gradually whisk in Veggie Broth.
6.) Blend to smooth if desired.
7.) Bring to boil.
8.) Simmer, stirring occasionally, until thick.
9.) Thin with Veggie Broth if desired.
